Eggs and Veggies

Eggs (get local fresh eggs preferably from chickens fed a high omega 3 diet).
Scramble with veggies:  try a few of the following: green onions, kale, spinach, collard greens, bok choy, chard, garlic, thyme, sage, grated or chopped zucchini, squash, broccoli, onion (don't add first, add later don't over cook).

FAST One dish dinner

...means one pot to wash!  5 min prep time, then relax and breathe while dinner bakes !

Add veggies (brocoli, root veggies, onion, garlic, cauliflour, leeks, ...) chopped into large chunks, covered in oil (coconut mixed with olive, or sesame) and some spices (ginger, fresh grated and or dried, rosemary, sage, thyme, or anything else use 1-3 at a time for best results) to a baking dish around a fish, a chicken, a hunk of any meat really or tempe / tofu and bake, usually 350 or so until the meat is done.  You can also add veggies later to make sure they don't get over cooked, or just choose your combo's wisely.  Try not to over cook anything really.  I've tried many combinations and have never been upset about dinner.

Roasted Roots

Chop root veggies like beets, parsnips, rutabaga, turnip in to big chunks and bake with rosemary ginger, olive oil and coconut oil.

I like to spread mine around a fish or other centerpiece and cook as a one pot meal !

Root mush

Bake beets and parsnips and mush together.  Great on it's own or with spices.
